Doing a healthier twist on a “TV Dinner” with Cod Fillet’s, Mac and Cheese and Frozen Mixed Veg.

We cooked this in a 450 oven for about 12 minutes.
We used a dredge that had bread crumbs, a little grated Parmesan cheese with onion and garlic powders and S&P.
We placed the fillets in a shallow greased baking dish and then brushed the fillets with melted butter then dipped in bread crumbs.
While they were cooking we added a little olive oil to the butter pan and fried some thin sliced shallots dusted with flour.
Then we made a package of rice noodle mac and cheese (the gluten free one with the processed cheese) and added 1/2 a can of lump crab meat (the ones by the sardines, not the fresh from the seafood counter).
When the Cod was finished we finished it with a little of the remaining crab meat and fried shallots.
Frozen veg is what it is and they eat it……
