Rosemary Chicken

IMG_6916.JPG

This is done in one cast iron pan and is inspired by the Rosemary wings we had at Pienza Restaurant outside of DC at the Gaylord Resort.

To start take 3 LBs of frozen wing parts.

Toss in Olive oil with our Poultry Seasoning, 2 sprigs Fresh Rosemary and a little rice wine vinegar.

Cut a large onion into 1″ slices and smash a few cloves of garlic, put to side.

Heat Cast Iron coated with a little canola oil and start to brown marinated, thawed wings.  Once browned on both sides add any additional marinade, smashed garlic, onion wedges/slices and a little water then pop into a 350 oven for 45 minutes.
